Gluten-Free Butternut Squash Soup To Warm You Up

There is nothing better than a hot bowl of soup to warm our bodies and souls.

We love soups and this is a favorite of our staff because it’s super yummy and easy to make. Also, there are many variations, so you can make it over and over again and you or your family won’t get tired of it.

Here is our recipe, hope you like it, too.

Ingredients:

3 cups of diced pumpkin
1 cup of diced onion
3 cloves of garlic
2 spoons of olive oil

Spices: (whatever you have, here is what we had the first time we made it and we loved it)
– Sea salt
– monosodium glutamate
– turmeric
– dry ground celery
– ground laurel
– cayenne pepper

Preparation:
Peel and dice the pumpkin, medium size. Dice the onions. Crash the garlics.

Heat the olive oil in a pan an add the onions and garlic. Add the sea salt and MSG to taste.

Once the onions are transparent add the pumpkin and brown it a little. Spice to taste.

Add 8 cups of hot water and cook it for about 10-15 minutes. Before serving you can blend it for creamy feel or leave it as it is for a rustic touch.
Here are some tips to give an extra flavor

Add:

  • chopped cashew nuts, chopped almonds or nuts (right before you serve)
  • coconut milk (half a can)
  • fried green onions
  • fried sweet potatoes (cut in very small bites)
  • grated ginger
  • fresh spices (chopped oregano, cilantro, parsley, etc)
