All the best inventions originated from mistakes
This recipe was also born from a mistake! We bought a new brand of tapioca starch and on the back of the package there was a recipe for the Brazilian cheese bread (pão de queijo, as they are called in Portuguese).
As you may know the Brazilian cheese bread is originally and naturally gluten free because there is no flour in the recipe, only tapioca starch.
We followed the recipe of the tapioca starch package. 2 1/2 cup of tapioca starch, 3 eggs, 3/4 cup milk, 3 tbsp sunflower oil, 1tbs baking powder, 1 tbs salt and 200g shredded cheese (parmesan). The instructions said we should mix everything up, let it sit for half an hour, shape them as little balls and bake them.
After mixing all the ingredients (except the cheese) we realized the dough was too liquid and there was no way we would be able to make little balls out of it, we were so disappointed, but we didn’t want all those ingredients to go to waste, so we decided we would make it work somehow.
We added 1/2 cup rice flour and 1/2 cup corn starch and 1/2 cup tapioca starch. The consistency improved significantly and we were able to shape the little balls with our hands, hurray! We baked 2 little balls and they came out of the oven beautifully!
We got so inspired by our achievement that we decided to give our Brazilian cheese bread some flavoring!
We separated the dough in five parts and added our favorite spices, so we ended up with 5 different flavors!
Enough with the talking! Here is the recipe!
- 3 eggs
- 3 cup tapioca starch
- 3/4 cup milk
- 3tbs sunflower oil
- 1/2 cup rice flour
- 1/2 cup corn starch
- 1 tbs baking powder
- 1 tbs sea salt
- 1 1/2 cup shredded cheese
- Favorite spices/herbs (optional)
Preheat the oven at 375°
Put all the dry ingredients in a bowl and whisk them.
Add the eggs, sunflower oil, milk and mix them. You will need to use your hands at this point.
Add the cheese and season it as you like. (we used oregano, dry onions, garlic, pizza seasoning and turmeric, not all together though.)
Let it rest for 20 minutes.
Shape them into little balls with your hands.
Grease a baking sheet and bake them for approximately 10 minutes.
They freeze very well. Just make sure they are well apart and they’ll be fine!
